When I am trying to decide on a drink pairing for a book, sometimes I just go by the setting and tone of the book. However, sometimes a specific drink is mentioned in a book, making the cocktail and book pairing a no-brainer.
When we meet our female main character, Ally, in By A Thread by Lucy Score, she isn’t in a great place in life. She’s working several jobs and still having a hard time making ends meet. Ally is working to pay for her father’s assisted living home. She’s stressed and mentally escapes by dreaming about one day going on a beach vacation and drinking a mango margarita.
Obviously, the drink pairing for By A Thread is a mango margarita. If your book club is reading By A Thread, it would be fun to make a pitcher of mango margaritas to serve to your guests!
I chose to make these margaritas keto by using Torani’s sugar free mango syrup. Of course, you can omit the syrup and use fresh mango if you prefer. If you use frozen mango, omit the ice.
Keto Frozen Mango Margarita
Yields 4 drinks
Ingredients:
1 Cup Lime Juice, plus lime wedges
1 Cup Silver Tequila
1/2 Cup Cointreau
1/3 Cup Torani Sugar Free Mango Syrup
Kosher Salt
6 Cups of Ice
Directions:
Pour kosher salt in a dish that is bigger than the diameter of your glass.
Cut a notch in the middle of a lime wedge. Wet the rim of the glass by rubbing the lime wedge around the rim.
Dip the rim of the glass into the kosher salt. Set aside. Repeat for each margarita glass.
Put tequila, lime juice, Cointreau, syrup and ice into a blender. Blend until combined. Pour equal amounts of the mango margarita into each glass. Serve immediately.
