This delightfully pink sparkly mimosa is the perfect pairing to the book Things We Hide From The Light by Lucy Score. It’s easy to make and with a small amount of preparation, you have a cocktail that will make your book club guests feel extra special!
I created this Sparkly Mimosa to pair with Things We Hide From The Light because of the delightful pink book cover and the bubbly banter between Nash and Lina. With a little simple preparation, you’ll have a beautiful and impressive cocktail.
Sparkly Mimosa
Ingredients:
1 bottle of Champagne or Prosecco
Ocean Spray White Cran-Peach Juice
Pink Edible Glitter
Silicone Rose Ice Cube Tray
1 cookie or baking tray that is slightly larger than the ice cube tray
Directions:
Place the rose ice cube tray on top of the baking tray. It serves as a support for the ice cube tray and makes it easy to transport the tray into the freezer. Fill each ice cube cavity with juice. Sprinkle a generous amount of glitter into each juice-filled rose.
Using a spoon, carefully and lightly stir the glitter around, evenly distributing it. The glitter will swirl and then fall to the bottom filling the crevices of the rose. Place the tray with the filled ice molds into the freezer for a minimum of 6 hours. Overnight is fine too, so you can prepare your ice a day in advance, if desired.
Once the ice is completely frozen, it’s ready to use. Put one ice rose into a coupe glass. Repeat for each glass. Top each with champagne and your Sparkly Mimosas are ready to serve!
